Mutton with Mixed Vegetables Recipe

Ingredients

  • oil for deep frying

  • 15 grams rice noodles (Mai Fun)

  • 57 grams bamboo shoots, sliced

  • 30 grams cucumber, sliced

  • 57 grams onions, sliced

  • 170 grams Chinese white cabbage, sliced

  • 57 grams mushrooms, sliced

  • salt

  • 227 grams lean mutton, diced

  • pepper

  • 1 teaspoon soy sauce

  • 1 teaspoon sugar

  • 1 teaspoon corn flour

  • 2 tablespoons water

  • few drops sesame oil

  • stock
     

Method

 

1. Bring oil to the boil and deep fry rice noodles for 2 minutes.
2. Remove and drain.
3. Toss bamboo shoots, cucumber, onions, white cabbage and mushrooms for 1 minute in a hot, oiled pan.
4. Season with salt to taste.
5. Add mutton, pepper to taste, soy sauce, and cook, stirring constantly, for 2 minutes.
6. Add sugar, corn flour diluted with water, sesame oil and stock.
7. Cook for 2 minutes. Transfer to a serving dish and serve garnished with rice noodles.
