Melting Snowballs Recipe

 

cooking time: 3 minutes

 

Ingredients

  • 227 grams breast of chicken, raw

  • cold water

  • 3 tablespoons corn flour

  • 1 teaspoon salt

  • pinch sugar

  • 1/2 teaspoon Ve-Tsin

  • 4 egg whites, stiffly beaten

  • 227 grams lard

  • 140 ml chicken stock

  • 1/2 tablespoon sherry

  • 2 tablespoons ham, minced and cooked

 

Method

 

1. Minced the chicken meat and pound in a mortar into a fine paste, adding 2 tablespoons water gradually,

    to keep the mixture moist.

2. Add half the corn flour, and the salt, sugar, Ve-Tsin and 1 egg white. Stir, blend in 2 more tablespoons

   cold water into the mixture and gently fold in remainder of egg whites

3. Heat lard without allowing it to boil hard.

4. Taking a teaspoonful of the chicken mixture at a time, drop into lard, fry for half a minute, turn to ensure

   uniform cooking, fry for another half minute, drain and keep warm.

5. Pour of all but 1 tablespoon of the fat in which the "snowballs" were fried.

6. Dilute with stock and sherry.

7. Blend the remaining corn flour with 2 tablespoons cold water, stir into the pan, bring to the boil, simmer

   for half a minute, add " snow-balls", heat through and transfer to a heated serving dish.

8. Sprinkle with ham and serve.
