Liver with Water Chestnuts Recipe

 

cooking time : 12 minutes


Ingredients

  • 340 grams calf's liver

  • 1 teaspoon corn flour

  • 2 tablespoons soy sauce

  • 1 tablespoon Chinese wine (or sherry)

  • juice of 1/2 lemon

  • 1 teaspoon brown sugar

  • 1 can water chestnuts

  • oil for frying

  • 1 onion, thinly sliced

  • salt
     

Method

 

1. Cut the liver into bite-size pieces.
2. Dilute corn flour with soy sauce, wine and lemon juice. Add sugar, stir well, pour the mixture over the liver

    and leave to stand for 25 minutes. Drain, but keep the marinade.
3. Slice the water chestnuts, cook them in their own liquid for 5 minutes.
4. Drain.
5. Heat oil and fry onion until transparent, add water chestnuts and cook together for 1 minute.
6. Move onion and water chestnuts to one side, and in the same pan fry liver for 2 minutes, stirring, to make

   sure it changes colour on all, sides.

7. Add liquid in which the liver was steeped. Cook, stirring all the time, for 1-2 minutes, until the sauce

   thickens.
8. Transfer to a warmed serving dish, sprinkle with very fine dry salt and serve.
