Liver and Kidney with Cucumber, Shanghai Style Recipe

 

cooking time:  8 minutes


Ingredients

  • 2 fresh cucumbers

  • salt

  • 30 grams kidney, soaked diced

  • 2-3 tablespoons lard

  • 227 grams calf's liver, sliced

  • 1 teaspoon corn flour

  • 2 tablespoons soy sauce

  • juice of 1/2 lemon

 

Method

 

1. Peel and dice cucumbers, sprinkle with salt and leave to stand for 20 minutes.
2. Fry kidney in lard for 3 minutes, move to one side.
3. Add liver and fry until it changes color —1-2 minutes.
4. Drain cucumbers and add to kidney and liver. Fry for 2 minutes.
5. Blend corn flour with soy sauce and lemon juice, pour over the contents of the frying pan, stir for
1/2 1  

   minute until the sauce thickens. Check seasoning. If necessary, add salt.
6. Transfer to a heated serving dish and serve at once.


Note:
Do not add salt during cooking, but just before serving.
