Ingredients

2 fresh cucumbers

30 grams kidney, soaked diced

2-3 tablespoons lard

227 grams calf's liver, sliced

1 teaspoon corn flour

2 tablespoons soy sauce

lemon
Method
1. Peel and dice cucumbers, sprinkle with
salt and leave to stand for 20 minutes.
2. Fry kidney in lard for 3 minutes, move to one side.
3. Add liver and fry until it changes color —1-2 minutes.
4. Drain cucumbers and add to kidney and liver. Fry for 2 minutes.
5. Blend corn flour with soy sauce and lemon juice, pour over the
contents of the frying pan, stir for

minute until the sauce
thickens. Check seasoning. If necessary, add salt.
6. Transfer to a heated serving dish and serve at once.
Note:
Do not add salt during cooking, but just before serving.
