Kid with Preserved Fruit Recipe

cooking time: 3 hours

 

Ingredients

  • 2.5 kg kid (scrag end)

  • boiling water

  • 15 grams dried mushrooms

  • 30 grams Chinese preserved fruits

  • 2 seeds cardamom

  • 1 tablespoon sugar

  • salt and pepper

 

Method

 

1. Cut the meat into small uniform pieces.
2. Place in saucepan of boiling water and cook for 2 minutes.
3. Add mushrooms, preserved fruit, cardamom and sugar, making sure that there is

   enough water to cover the meat.
4. Steam under a lid for 3 hours.
5. Season with salt and pepper and serve.


Note:
In China, shredded sugar cane is used for this dish instead of sugar.
