Hot Mutton Fry Recipe

 

Ingredients

  • salt

  • 1 tbsp ground fennel (jintan manis)

  • 20-30 ground dried chilies

  • 2 cm piece ground root ginger

  • 30 chopped shallots

  • 2 ripe tomatoes

  • 2 sprigs curry leaves

  • water

  • 1 kg mutton

  • juice of 1 lime

  • 2 sprigs curry leaves

  • 1 piece cinnamon stick

  • 4 cloves

  • 1 star anise

  • 5 tbsp ghee

 

Method

 

1. Put mutton in a saucepan with ground spices, tomatoes, curry leaves and enough water to cover meat.

2. Boil gently till cooked.

3. Heat a fry pan with ghee.

4. Fry shallots and whole spices.

5. Stir in mutton frying till fragrant.

6. Add lime juice. Serve hot with boiled rice.
