Hot Curried Chicken Recipe

 

Ingredients

  • 1 chicken approx

  • 1 1/2 kg in weight jointed

  • 30 dried chilies

  • 1 tbsp fennel

  • 30 shallots

  • 2 cloves garlic

  • 2 cm piece root ginger

  • 2 sprigs curry leaves

  • 600 g peeled potatoes (cut in half)

  • 3 tbsp mustard seeds

  • Juice of 1 big lime

  • salt

  • 1/2 cup thick coconut cream from 1/2 granted coconut

  • 1 litter coconut

  • 1 litter water

 

Method

 

1. Grind spices till fine. Marinate chicken in spices.

2. Stand for 1 hour. Heat the ghee in a clay pot.

3. Fry the shallots, garlic and mustard seeds, then add chicken and potatoes.

4. Stir over low chicken and potatoes.

5. Stir over low heat. Add curry leaves and salt.

6. When chicken and potatoes are covered with spice, add water, and cover the pot.

7. Cook till chicken and potatoes are tender.

8. Stir in the coconut cream and lime.

9. Bring quickly back to boil then remove from heat.
