Ingredients

450 grams pork, minced

2 tablespoons flour

1 teaspoon Chinese wine (or sherry)

1 teaspoon light soy sauce

Ve-Tsin

salt and pepper

large packet frozen peas

1 cup water, boiling

2 tablespoons peanut oil

3 spring onions cut 1-
1 1/2
-inch lengths

1-2 slices ginger
-
1/4
teaspoons corn flour

1-2 tablespoons water, cold
Method
1. Sprinkle pork with flour, wine, soy
sauce, small pinch Ve-Tsin, and salt and pepper to taste. Mix well.
2. Cook peas in salted boiling water for 2 minutes and drain.
3. Heat oil, fry onion and ginger for 2-3 minutes, until they render up
their flavours and discard them.
4. Fry pork in this onion and ginger flavoured oil for 5 minutes,
stirring constantly.
Add peas, cook for 1
minute.
5. Dilute corn flour in cold water, stir into the pan, cook for 1
minute and serve.
