Fried Veal with Green Peppers Recipe

Ingredients

  • 450 raw veal, diced pinch salt

  • 1 teaspoon corn flour

  • 1 egg white, lightly beaten

  • 2 teaspoons Chinese wine (or sherry)

  • 113 grams lard

  • 57 grams mushrooms, sliced

  • 57 grams green peppers, seeded, diced

  • 2-3 tablespoons bamboo shoots, sliced

  • 1 tablespoon sweet soy bean paste

  • 1 tablespoon ordinary soy bean paste

  • pinch sugar

  • pinch Ve-Tsin

  • 1/2 teaspoon chestnut powder (or corn flour)

  • 1-2 tablespoons stock (or water)

 

Method

 

1. Mix veal with salt, corn flour, egg white and wine.

2. Heat lard and fry veal for 2 minutes, remove and leave aside.

3. In the same fat fry together, mushrooms, peppers and bamboo shoots for 2 minutes. Remove and put with

    veal.

4. In the same pan fry the sweet and ordinary soy bean paste for 2-3 minutes. Add veal and the vegetables

    sprinkle with sugar and Ve-tsin.

5. Blend chestnut powder with stock, stir into the pan, cook for 1 minute and serve.
