Method
1. Mix veal with salt, corn flour, egg white and wine. 2. Heat lard and fry veal for 2 minutes, remove and leave aside. 3. In the same fat fry together, mushrooms, peppers and bamboo shoots for 2 minutes. Remove and put with veal. 4. In the same pan fry the sweet and ordinary soy bean paste for 2-3 minutes. Add veal and the vegetables sprinkle with sugar and Ve-tsin. 5. Blend chestnut powder with stock, stir into the pan, cook for 1 minute and serve.
