Method
1. Cut chicken into quarters, and put into a basin.
2. Sprinkle with salt, Chinese spice, pepper and gin. Leave to macerate
for 12 hours.
3. Drain the chicken and deep fry in a pan of boiling oil until it
acquires a golden colour.
4. Drain. Cut into pieces 1-inch by
1/2 inch.
5. Arrange on a dish, sprinkle with spices remaining on dish on which
chicken was macerated, and serve
