Fried Jointed Chicken Recipe

cooking time: 30 minutes

 

Ingredients

  • 1 roasting (or young boiling) fowl

  • 450 grams lard (or equivalent amount oil)

  • 450 grams spring onions

  • pepper and salt

 

Method

 

1. Joint the chicken into eight pieces (if boiling fowl used, simmer for 30 minutes, allow to cool, then joint).
2. Heat fat and deep fry chicken until golden, allowing about 30 minutes, (or more if old bird used).
3. Make sure all pieces are well basted during cooking.
4. Drain on greaseproof paper and garnish with spring onions cut into 2-inch strips. -
5. Mix salt and pepper in equal proportions, dry off slightly in the oven.
6. Sprinkle on chicken, and serve.
