Ingredients

227 grams breast of chicken

1 can bitter melon (or cucumber green
pepper)

1 dessertspoon oil for cooking

1 teaspoon garlic, crushed

1 teaspoon black bean paste

salt
-
veal (or chicken stock)

1 dessertspoon sherry
-
few drops sesame oil
-
1 teaspoon corn flour
-
2 tablespoons water
-
1 teaspoon sugar

1 teaspoon soy sauce
Method
1. Cut chicken and bitter melon into very
thin strips.
2. Heat oil in pan, put in garlic, black bean paste and a pinch of salt
and scramble for
1/2 minute.
3. Add bitter melon, cook for 1 minute.
4. Cover with stock.
5. Simmer for 2 minutes, then add chicken, sherry, sesame oil and corn
flour diluted with water.
6. Simmer for 2 minutes.
7. Add sugar and soy sauce.
8. Cook for 1 minute and serve.
