Fried Chicken with Bitter Melon Recipe

Ingredients

  • 227 grams breast of chicken

  • 1 can bitter melon (or cucumber green pepper)

  • 1 dessertspoon oil for cooking

  • 1 teaspoon garlic, crushed

  • 1 teaspoon black bean paste

  • salt

  • veal (or chicken stock)

  • 1 dessertspoon sherry

  • few drops sesame oil

  • 1 teaspoon corn flour

  • 2 tablespoons water

  • 1 teaspoon sugar

  • 1 teaspoon soy sauce
     

Method

 

1. Cut chicken and bitter melon into very thin strips.
2. Heat oil in pan, put in garlic, black bean paste and a pinch of salt and scramble for
1/2 minute.
3. Add bitter melon, cook for 1 minute.
4. Cover with stock.
5. Simmer for 2 minutes, then add chicken, sherry, sesame oil and corn flour diluted with water.
6. Simmer for 2 minutes.
7. Add sugar and soy sauce.
8. Cook for 1 minute and serve.
