Duck with Salt Lemon and Ginger Sauce Recipe

Ingredients

 

  • 1 salt lemon

  • 30 grams fresh ginger

  • 570 ml vinegar

  • 1 dessertspoon sugar

  • 1 teaspoon sesame oil

  • 1 duck, (about 1.4 kg) cleaned and drawn

  • boiling water

  • 113 grams Chinese pickled ginger
     

Method

 

1. Shred lemon skin finely, having first scraped off the pith.
2. Chop fresh ginger finely and mix with lemon skin, vinegar, sugar and sesame oil. Blend well.
3. Put the duck into a large pan of boiling water.
4. Bring to the boil, simmer for 45 minutes and allow to cool in the same water.
5. Bone the duck and cut the meat into very thin slices.
6. Slice the pickled ginger and line a dish with it. On this foundation put the duck slices.
7. Bring the lemon and ginger sauce to the boil, pour over the duck, and serve.
