Duck with Black Beans Recipe

Ingredients

 

  • 113 grams roast duck, diced

  • 1/2 teaspoon salt

  • pinch sugar

  • pinch Ve - Tsin

  • few drops sesame oil

  • 1 teaspoon soy sauce

  • 2 teaspoons corn flour

  • 4 slices fresh ginger

  • 2 tablespoons canned black beans

  • 1 clove garlic, crushed

  • 1 tablespoon onion, chopped

  • 2 tablespoons peanut oil

  • 140 ml chicken stock ( or water with a bouillon cube)

  • 1 tablespoon Chinese wine (or sherry)

  • 2 tablespoons cold water

 

Method

 

1. Put duck meat in a bowl, sprinkle with salt, sugar, Ve-Tsin, sesame oil, soy sauce and 1 tablespoon

   corn flour. Mix well and leave to macerate for 5 minutes.

2. Chop the ginger with the beans, add garlic and pound together into a paste.

3. Fry onion in peanut oil for 1 minute, without allowing it to brown.

4. Add black bean paste and cook, stirring all the time, for 1 minute.

5. Add duck, stir, moisten with stock and wine. Cook for 1 minute.

6. Check seasoning, adding more salt or Ve- Tsin if necessary.

7. Dilute remaining corn flour in cold water, stir into the pan, cook for 1 minute until the sauce thickens and

   acquires a characteristic translucency, and serve.
