Crystal Chicken Recipe

 

cooking time:  3hrs 30 minutes

 

Ingredients

  • 1 tender chicken

  • 3-4 metal spoons

  • boiling water

  • 1 slice green ginger

  • 2 spring onions

  • 2 small onions, sliced
     

Method

 

1. Clean and draw the chicken and insert metal spoons into it to act as heat conductors.
2. Choose a saucepan large enough to hold both the bird and enough water to cover.
3. Measure out the required amount of water, bring it to the boil and add ginger, spring onions and onion.

   (This counteracts the oily taste of the skin.)
4. Put the chicken into the boiling water. Wait until boiling is re-established. Boil fast for 30 seconds.
5. Remove from heat, cover the saucepan and leave the chicken to get quite cold.

   This should take about 3 hours 30 minutes.

6. When quite cold, drain the chicken, slice and serve with one of the following
