Crisp Twice Cooked Pork Recipe

Ingredients

  • 340 grams belly of pork

  • 1 tablespoon soy sauce

  • 1 tablespoon Chinese wine (or sherry)

  • 1/2 teaspoon star aniseed

  • 1 teaspoon sugar

  • oil for deep frying

  • 1 egg, beaten

  • 113 grams corn flour

Method

 

1. Put pork into a pan, sprinkle with soy sauce, wine, aniseed and sugar.

    Bring to the boil. Cover with a well fitting lid and simmer gently for 40 minutes.
2. Heat oil. Cut pork into bite-size pieces, dip in egg and corn flour, shake off any surplus of corn flour.
3. Deep fry pieces of pork for a few minutes, until crisp and golden. Drain and serve at once.


Note:
The pan juices left from braising the pork can be reheated and served separately.
