Chicken in White Cloud Recipe

 

cooking time: 45 minutes

 

Ingredients

  • 1 young oven-ready chicken (about 1.4 kg)

  • salt

  • 3 cloves garlic

  • 3-4 leeks

  • 2 tablespoons sherry

  • 1 tablespoon dark soy sauce

  • 1 tablespoon honey

  • shrimps crackers

 

Method

 

1. Rub chicken with salt.
2. Crush garlic and cut leeks into 2-inch chunks. Sprinkle with 1 teaspoon sherry and

    soy sauce and use for stuffing the chicken.
3. Stitch up the opening.
4. Mix remaining sherry, soy sauce and honey, rub into the chicken and leave for 15 minutes to absorb

    the dressing.
5. Heat oven (375°F.—Gas Mark 4).
6. Brush the chicken with the dressing again and put to bake.
7. Turn from time to time as one side browns, painting the side you want to brown with the sherry -

    soy-honey mixture. Cook for 45-50 minutes.
8. Remove from oven, cut up, arrange on a heated serving dish giving the bird as near its original shape as

    you can achieve, cover with freshly made shrimps crackers (to make the `white cloud') and serve.
