Method
1. Cut mushrooms into 1/4 inch strips. 2. Combine chicken with soy sauce, brandy, corn flour and salt to taste. 3. Heat oil in pan and brown garlic in it. 4. Remove garlic and saute chicken briskly without allowing it to brown (2 minutes). 5. Add oyster sauce, mushrooms and celery. Simmer for 5 minutes, stirring constantly. 6. Add walnuts and water. Simmer for 2 minutes, and serve.
