Chicken Strips in Oyster Sauce Recipe

Ingredients

  • 450 grams chicken, boned

  • 2 teaspoons corn flour

  • 1/2 teaspoon sugar

  • 1 teaspoon soy sauce

  • pinch salt

  • 85 grams bamboo shoots

  • 30 grams fresh ginger

  • 6 spring onions

  • 1 tablespoon peanut oil

  • 1 tablespoon oyster sauce

  • 2 tablespoons water

 

Method

 

1. Cut chicken meat into thin strips. Put in a bowl, sprinkle with 1 teaspoon corn flour, sugar, soy sauce

    and salt and mix well. Leave

2. Bring bamboo shoots to the boil in enough salted water to cover, lower heat, simmer for 15 minutes,

    drain and cut to match the chicken.

3. Cut chives into 1 inch lengths.

4. Chop ginger and onions together very finely.

5. Toss bamboo shoots in a frying pan without and grease, to dry them off. Shake the pan stir to prevent

    burning.

6. Heat oil in pan, add ginger and onion and fry for 2 minutes.

7. Add chicken and fry, stirring all the time, for 2 minutes.

8. Add bamboo shoots, stir carefully, cook for 1 minutes.

9. Sprinkle in chives and blend in oyster sauce.

10. Dilute remaining corn flour with water, stir into the pan cook for 1 minute to thicken the sauce and serve.
