Chicken in Salt Recipe

cooking time :  3hrs 30 minutes

 

Ingredients

  • 1 roasting chicken ( 1.4 kg), trussed

  • salt (1.4 kg)

Method

 

1. Dry the chicken with a cloth inside and out.

2. Pour the salt into a pan deep enough to take all of it and the chicken.

3. Heat, until very hot, stirring frequently.

4. Make a well in the middle, put the chicken into it and cover with salt completely.

5. Cover the pan tightly ( sealing with flour and water paste, if the cover does not fit well enough).

6. Cook over slow heat for 30 minutes, turn off heat, leave the chicken without opening the pan

   for another 30 minutes.

7. Take the chicken out of the salt, leave it to cool a little ( about 15 minutes) and serve.
