Chicken Asopao Recipe

Ingredients

  • 6 c. uncooked rice

  • 6 tbsp sofrito

  • 1.8 kg chicken cut up

  • 3 tbsp shortening

  • 2 cans tomato sauce

  • 3 qt boiling water

  • 2 tbsp salt

  • 1 pkg frozen peas

  • 1 sml jar stuffed olives

  • 2 jars pimento

 

Method

 

1. Soak rice in water about 30 minutes.

2. Brown chicken in shortening in large skillet.

3. Add sofrito and tomato sauce.

4. Add drained rice and cook about 5 minute. stirring constantly.

5. Add boiling water and salt and let boil 10 minutes.

6. Reduce heat to medium and let simmer covered until rice is tender and still moist, about 15 minutes.

7. Add peas, olives and pimento and cook 5 minutes longer. Serve immediately.
