Method
1. Soak rice in water about 30 minutes. 2. Brown chicken in shortening in large skillet. 3. Add sofrito and tomato sauce. 4. Add drained rice and cook about 5 minute. stirring constantly. 5. Add boiling water and salt and let boil 10 minutes. 6. Reduce heat to medium and let simmer covered until rice is tender and still moist, about 15 minutes. 7. Add peas, olives and pimento and cook 5 minutes longer. Serve immediately.
