Method
1. Cut pork into uniform square pieces.
2. Put in water, bring to boil, skim and simmer for 30 minutes.
3. Strain off the stock into a bowl leaving the pork in a pan.
4. Add to pork, soy sauce and cook gently for 10 minutes, turning
constantly to brown on all sides.
5. Add sherry, sugar and salt. Stir and add stock.
6. Cook for 20 minutes, stirring from time to time.
7. Add mushrooms, slipping them under the pork and simmer gently for 10
minutes.
This dish can be served hot
or cold.
