Ingredients

1 duck singed cleaned

glutinous rice for stuffing

2.5 litter water

140 ml soy sauce

1 tablespoon Chinese wine (or Vermouth)

pepper and salt

30 grams spring onions, chopped
Method
1. Boil duck in enough water to cover for
30 minutes.
2. Stuff with glutinous rice and put to simmer in water on low heat for
45-50 minutes.
3. Pour off the water, leaving duck in pan.
4. Add soy sauce, vermouth and simmer for 1 hour, turning duck to brown
all over.
5. Serve with salt, pepper and spring onions.
