Braised Duck with Onions Recipe

Ingredients

  • 1 duck, singed and cleaned

  • 1 1/2 teaspoon salt

  • 680 grams small pickling onions

  • 1 dessertspoon soy sauce

  • 1 dessertspoon brandy

  • 1 clove garlic, crushed

  • 2 tablespoons oil

  • 710 ml water

  • 1 teaspoon corn flour
     

Method

 

1. Rub duck with salt and leave to stand while onions are being peeled.
2. Combine soy, brandy and garlic and rub duck with the mixture.
3. Heat oil in a pan and brown the duck all over, then add whole small onions.
4. Add water, cover with a lid, and cook in a moderate oven for 1 hour, basting frequently.
5. Add corn flour diluted with 2 tablespoons water to thicken the gravy.
6. Bring to the boil and serve.
