Method
1. Rub duck with salt and leave to stand
while onions are being peeled.
2. Combine soy, brandy and garlic and rub duck with the mixture.
3. Heat oil in a pan and brown the duck all over, then add whole small
onions.
4. Add water, cover with a lid, and cook in a moderate oven for 1 hour,
basting frequently.
5. Add corn flour diluted with 2 tablespoons water to thicken the
gravy.
6. Bring to the boil and serve.
