1. Sprinkle duck with 1 teaspoon salt.
2. Mix soy, cinnamon and brandy together and rub the mixture into the
duck.
3. Heat oil in large pan and brown the duck thoroughly.
4. Add water, bring to the boil, reduce heat and simmer gently for 1
hour.
5. Add corn flour diluted with 2 tablespoons water, to thicken the
sauce.
6. Shred lettuce, arrange it on a serving dish and use as foundation
for the duck.
7. Reduce the pan juices, pour over the duck and serve.
