Beef with Lotus Roots Recipe

Ingredients

  • 450 grams beef

  • 1 clove garlic

  • 30 grams fresh ginger

  • 1 tablespoon oil

  • salt

  • few drops aniseed

  • 1 teaspoon thick sweet sauce

  • 1 small piece dried

  • orange peel

  • 2 teaspoons soy sauce

  • 113 grams dried lotus roots

  • Veal stock (or beef stock)
     

Method

 

1. Cut beef into uniform pieces.
2. Pound garlic and ginger separately.
3. Put garlic in a hot oiled pan, cook for a few minutes and remove.
4. Place beef in pan, salt to taste and `scramble' (i.e. cook quickly, stirring frequently) for 5 minutes.
5. Add aniseed, ginger, thick sweet sauce and orange peel. Simmer for 5 minutes.
6. Add soy sauce, lotus roots and sufficient stock to cover.
7. Simmer slowly for 2 hours.
