Sweet and Sour Scallops with Pineapple Recipe

Ingredients

  • 1 dozen scallops

  • cold water

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 2 teaspoons soy sauce

  • oil

  • 2-3 tablespoons plain flour

  • 2 eggs, beaten
     

Method

 

1. Soak the scallops in water for an hour to swell them. Drain and wipe.
2. Sprinkle with salt, sugar, and the soy sauce, and leave to macerate, for 20 minutes.
3. Heat the oil and while it is heating, roll scallops lightly in flour, then dip into egg.
4. Drop them one by one into boiling oil. Deep fry until golden and drain on greaseproof paper.
5. While the scallops are frying, prepare the sauce.
6. Immerse scallops in sauce and serve.
