Stir Fried Razor Clams with Fermented Black Beans Recipe

Ingredients

  • 600 gram fresh razor clams

  • 2 tsps grated garlic

  • 2 tsps chopped fermented black beans

  • red chili shreds

  • 2 tsps Shaoxing wine

  • 1 tsp light soy sauce

  • 1 tsp dark soy sauce

  • 1/2 tsp sugar

  • 1 tsp corn flour

  • 2 tbsps water

 

Method

 

1. Gut fresh razor clams. Rinse and drain.

2. Heat 2 tbsps of oil in wok. Add grated garlic and chopped fermented black beans. Stir fry until fragrant.

   Pour in wine slightly. Stir fry well. Cover the lid for 5 minutes. Mix in seasoning. Add red chili shreds

   and sauce. Cook until the sauce thickens. Serve.
