Method
1. Soak the Oyster, as above, for 2 hrs, then rinse well. 2. Soak mushrooms for 30 minutes, remove stalks. 3. Cut the pork slices and bamboo shoots into uniform 1 inch by 1/2 inch pieces. 4. Fry the garlic in a hot oiled pan for 10 seconds, remove it, put in the mushrooms, cook for 5 minutes. 5. Add oysters, pork and bamboo shoots and cook together for 2 minutes. 6. Transfer into a saucepan, add enough stock to cover and simmer gently for 2 hrs. 7. Dilute the corn flour with water and add to the pan. 8. Sprinkle in soy sauce, season with salt and pepper and serve.
