Method
1. Wash the lobsters, cut off heads, remove and crack claws, clean out and throw away digestive tracts. 2. Without taking flesh out of the shell cut the lobsters in half lengthways, then across into 1-inch pieces. 3. Put them in a shallow heatproof dish. 4. Beat the eggs lightly, add all the other ingredients and seasoning, blend well. 5. Spread this mixture over the lobsters. 6. Put the dish on a gird in a fish kettle, with water reaching within 1 inch of the dish. Cover 7. Bring the water to the boil, simmer gently for 30 minutes, reduce heat, and serve at once.
