Ingredients

57 grams bamboo shoots, diced

57 grams cucumber, diced

57 grams mushrooms, diced

oil
-
salt and pepper

1 teaspoon sugar

stock to cover

227 grams sole, filleted

flour
-
1 teaspoon corn flour

2 tablespoons cold water

1 teaspoon soy sauce
-
few drops sesame oil
Method
1. Toss bamboo shoots, cucumber and
mushrooms quickly in a hot oiled pan, allowing no more than 1 minute.
2. Sprinkle with salt and pepper, add sugar and stock.
3. Simmer for 3 minutes, meanwhile season the fish with salt and pepper
and dredge with flour.
4. Heat oil in a pan and deep fry the fish for 2 minutes.
5. Add fish to vegetables and cook for 1 minute.
6. Blend in corn flour, diluted with water, soy sauce and sesame oil.
Note:
This recipe is equally good for plaice and other flat fish.
