Ingredients

450 grams shelled shrimps (prawns),
uncooked shredded

450 grams pimentos

2 tablespoons oil

1 teaspoon salt

5 tablespoons water

1 knob green ginger, shredded

1 teaspoon sugar

1 dessertspoon soy sauce

57 grams cucumber, sliced

1 teaspoon sherry

1 teaspoon corn flour
Method
1. Split the shrimps (prawns) lengthwise
and remove intestinal cord.
2. Cut pimentos, remove core and seeds and slice into half rings.
3. Heat 1 tablespoon oil in pan, add
1/2
teaspoon salt and quickly toss the pimentos for a few seconds.
4. Add 1 tablespoon water and simmer for 3 minutes.
5. Remove from pan and keep hot.
6. Heat the rest of the oil, add remainder salt and ginger, and saute
the shrimps (prawns) briskly for
1 minute.
7. Add sugar, soy sauce, cucumber, sherry, and
2. tablespoons water, simmer for 3 minutes, add pimentos and their
juice. Mix.
8. Cook together for 1 minute, add corn flour diluted with 2
tablespoons water, and serve.
