Shrimps Cutlets Stuffed with Almonds Recipe

Ingredients

  • 450 grams uncooked Dublin Bay Shrimps

  • 1- 2 rashers lean bacon

  • 57 grams almonds, blanched and roasted

  • salt

  • 1 egg beaten

  • flour

  • oil
     

Method

 

1. Peel the shrimps and make a slit in them without opening them out.
2. Shred the bacon and chop the almonds, put i teaspoon of this mixture into each slit in the prawn.
3. Push edges of slit gently together.
4. Season with salt.
5. Dip in egg, dredge with flour and deep fry in smoking hot oil until golden.
6. Drain and serve at once.
