1. Peel the cucumbers and cut into
quarters lengthwise, then into 2-inch chunks.
2. Shell and clean shrimps, dredge with a mixture of corn flour, salt,
and sherry.
3. Heat pan, add 2 tablespoons oil, fry shrimps for
3 minutes. Drain.
4. Add remaining tablespoon oil to pan, reheat and fry cucumber for a
few seconds.
5. Add soy sauce, sugar, and corn flour mixed with water.
6. Blend well, simmer for 1 minute, add prawns, heat thoroughly and
serve.
