Ingredients

113 grams almonds, blanched

450 grams large shrimps (prawns) uncooked

1 slice ginger, pounded

1 dessertspoon corn flour

1 tablespoon oil

1 clove garlic, crushed

57 grams celery, finely chopped

1 teaspoon soy sauce

1 teaspoon brandy

2 tablespoons water
Method
1. Toss the almonds with salt in a
slightly greased pan, just enough to turn them lightly golden.
2. Be careful not to burn.
3. Drain on greaseproof paper.
4. Peel the shrimps (prawns), leaving the tail tips on.
5. Split the shrimps (prawns) lengthwise and remove intestinal cord.
6. Sprinkle with salt, put in a basin, add ginger, and corn flour and
mix well.
7. Heat oil in pan, add garlic, cook for 1 minute, then remove garlic.
8. Put in the shrimps (prawns) and cook for 3 minutes, stirring
constantly.
9. Season with pepper, add celery and cook for 3 more minutes.
10. Add soy sauce and brandy.
11. Rinse the basin in which the prawns were mixed with the water, and
pour into the pan. Bring to the boil.
12. Add almonds, stir, allow to come to the boil once more, and serve.
Variation
Shrimps (Prawns) with walnuts
As above, substituting shelled, skinned walnuts for almonds but
omitting the roasting process for the nuts.
