Ingredients
10 scallops
1 tablespoon peanut oil (or lard)
1 small onion, finely chopped
2 sweet peppers, seeded, shredded
2-3 thin slices fresh ginger
pinch salt
Method
1. Cut each scallop into 3-4 thin round slices. 2. Fry in hot oil for 1 minute, stirring all the time. 3. Add onion, peppers, ginger and salt. 4. Cook together for 2 minutes stirring constantly and serve.
