Scallops with Sweet Peppers (Pimentos) Recipe

cooking time: 5 minutes


Ingredients

  • 10 scallops

  • 1 tablespoon peanut oil (or lard)

  • 1 small onion, finely chopped

  • 2 sweet peppers, seeded, shredded

  • 2-3 thin slices fresh ginger

  • pinch salt
     

Method

 

1. Cut each scallop into 3-4 thin round slices.
2. Fry in hot oil for 1 minute, stirring all the time.
3. Add onion, peppers, ginger and salt.
4. Cook together for 2 minutes stirring constantly and serve.
