Plaice Fillets with Mixed Vegetables and Roasted Almonds Recipe

Ingredients

  • 450 grams

  • 2 tablespoons flour

  • 1 egg

  • salt

  • pepper

  • 280 ml peanut oil

  • 113 grams mushrooms, sliced

  • 6 spring onions, chopped

  • 113 grams beans, sliced

  • 2 tablespoons soy sauce

  • 1 teaspoons sugar

  • 1 teaspoons corn flour

  • 2 tablespoons stock (or water)

  • 57 grams roasted almonds, slivered

 

Method

 

1. Cut the plaice (or other filleted fish) into bite-size strips.
2. Mix flour and egg to make a light batter, season with salt and pepper.
3. Heat oil. Dip fish in batter and fry until golden. Remove and keep warm.

4. Fry mushrooms, for 3 minutes, add onions and beans. Cook together, stirring constantly, for 3 minutes.

5. Add soy sauce, sprinkle in sugar. Dilute corn flour in stock, and blend into the pan. Cook uncovered

   for 2 minutes.

6. Transfer to a heated serving dish, lay strips of fish on top of vegetables, sprinkle with almonds and

    serve.
