Mullet Shanghai Style Recipe

Ingredients

  • 1 mullet (910 grams.)

  • 3 spring onions, chopped

  • 140 ml ( 1/2 Cups) soy sauce

  • 2-3 tablespoons sherry

  • 2 tablespoons brown

  • sugar

  • 2-3 tablespoons water

  • lard for deep frying

 

Method

 

1. Scale and wash mullet, remove head. Cut fish into steaks 1—inch thick, lay them in a bowl and

    sprinkle with spring onions.  
2. Mix soy sauce with sherry, sugar and water, bring to the boil, allow to cool, pour over the slices

    of mullet and leave for 3 hours, turning them from time to time.
3. Heat lard. Drain mullet steaks, deep fry for 22 minutes on each side, until crisp and golden.

    Drain and serve at once.


Note:


This recipe is equally successful when applied to bream.
