Ingredients

2 live lobsters (about 450 grams)

4 tablespoons oil

1 clove garlic, crushed

227 grams pork, finely minced

3 tablespoons soy sauce

1 teaspoon sugar

1 teaspoon salt

1/2
teaspoon pepper

100 ml boiling water

1 teaspoon corn flour
-
3 tablespoons cold water

1 egg
-
3-4 spring onions, chopped
Method
1. Clean the lobsters as described in the
recipe for Steamed lobster, Hong Kong style, and
cut into 1-inch
pieces, shell and all.
2. Heat the oil with the garlic.
3. Add pork and fry briskly until brown.
4. Add soy sauce, stir; add sugar, salt, pepper, and boiling water.
Blend well.
5. Add lobster pieces and cracked claws. Cook under a lid for 12
minutes.
6. Mix corn flour with water, add to the pan and stir until the sauce
thickens and becomes smooth.
7. Turn off heat.
8. Whisk the egg lightly, pour over lobster, stir, add spring onions,
stir again and serve.
