Frogs' Legs with Pears Recipe

Ingredients

  • 680 grams hard pears

  • 6 pairs frogs' legs

  • 1 dessertspoon oil

  • 1 teaspoon ginger root juice

  • 1/2 teaspoon sugar

  • 1 teaspoon sherry

  • salt

  • 280 ml veal stock (or chicken stock)

  • 1 teaspoon corn flour

  • 2-3 tablespoons cold water

  • few drops sesame oil
     

Method

 

1. Core and slice the pears.
2. Cut each frog's leg into 2 pieces and put in hot oiled pan together with ginger root juice, sugar, sherry,

    and salt to taste.
3. Cook for 2 minutes.
4. Remove frogs' legs and put in a dish.
5. Add pears to the pan and cook for 2 minutes.
6. Add frogs' legs and stock and cook together for 2 minutes. Add corn flour diluted with water, and sesame

   oil. Cook for 1 minute and serve.
