Frogs Legs with Chicken Livers Recipe

Ingredients

  • 1 tablespoon lard

  • 1 teaspoon fresh ginger, cut in shreds

  • 15 grams spring onions, cut in 1-inch pieces

  • 12-16 frogs' legs, skinned and ready for cooking

  • 227 grams chicken livers

  • 57 grams fresh mushrooms, sliced

  • 113 grams spring greens, shredded

  • pinch salt

  • 1 tablespoon soy sauce

  • 1 teaspoon corn flour

  • 1 tablespoon Chinese wine (or sherry)

  • pinch Ve-Tsin

  • 1/2  teaspoon sugar sliced
     

Method

 

1. Heat lard in a pan, add ginger, spring onions and frogs' legs.
2. Cook for 2 minutes.
3. Add chicken livers, mushrooms, spring greens and cook for J minute, stirring constantly.
4. Add salt, soy sauce, corn flour diluted with wine, Ve-Tsin and sugar. Stir, simmer for 5 minutes and serve.
