Ingredients

113 grams dried oysters

30 grams mushrooms, diced

113 grams water chestnuts, diced

113 grams bamboo shoots, diced

oil

1 dessertspoon sherry

1 teaspoon soy sauce

salt and pepper

1 teaspoon corn flour

2 tablespoons cold water

2-3 small lettuce hearts, finely shredded
Method
1. Put the oysters in a bowl, cover with
hot water and leave to soak for 8 hours.
2. Chop the oysters, add to them mushrooms, water chestnuts and bamboo
shoots.
3. Heat some oil in a pan and cook the mixture for 5 minutes.
4. Add sherry, soy sauce, and salt and pepper' to taste. Cook for 3
minutes.
5. Add corn flour diluted with water, and cook for a further minute.
6. Line a dish with lettuce and serve the oyster mixture on top.
