Fried Lobster with Vegetables Recipe

Ingredients

  • 1 tablespoon oil

  • 170 grams onions, sliced

  • 57 grams celery, sliced

  • 113 grams water chestnuts, sliced

  • 170 grams  bamboo shoots, sliced

  • 113 grams cucumber, sliced

  • 57 grams mushrooms, diced

  • stock to cover

  • 450 grams lobster meat, sliced

  • 1/2 teaspoon pepper

  • 1 dessertspoon sherry

  • 1 teaspoon corn flour

  • 2 tablespoons cold water

  • few drops sesame oil

  • 1 teaspoon soy sauce
     

Method

 

1. Heat half the oil in pan, add all vegetables and toss for 1 minute.
2. Add stock. Cover pan, and simmer for 1 minute.
3. Remove vegetables and put on a dish.
4. In another pan heat rest of the oil. Put in lobster slices.
5. Season with pepper, add sherry, and cook for 1 minute, stirring gently.
6. Add vegetables, cook together for 2 minutes.
7. Blend in corn flour diluted with water and sesame oil.
8. Sprinkle in soy sauce, cook for a further minute, and serve.
