Fried Bream with Black Beans Recipe

Ingredients

  • 1 bream (450 grams)

  • salt

  • plain flour

  • 30 grams black soy sauce

  • 1 teaspoon brandy

  • 1 clover garlic, crushed

  • 4 tablespoons oil

  • 1 dessertspoon corn flour

  • 280 ml water

  • 4-5 spring onions

  • 15 grams cooked lean pork

  • 1 teaspoon soy sauce

 

Method

 

1.  Make a few shallow incisions, slantwise, on both sides of fish.

2.  Sprinkle with salt and coat with flour, making it adhere properly.

3.  Scald the soy beans and mix with brandy and garlic.

4.  Heat the oil in a large pan and fry the fish until golden.

5.  Put on large serving dish and keep hot.

6.  Pour off surplus oil from pan, fry the black bean mixture for 2 minutes, stirring constantly.

7.  Blend corn flour with water, add to the pan, cooking for 2 minutes, stirring all the time.

8.  Cut spring onions into 2-inch strips, then with a sharp knife into as many strips lengthwise as possible.

9.  Add to the pan.

10. Shred the pork, place in the sauce to heat it. Pour over fish sprinkle with soy sauce and serve.

 

Variation

Steamed Bream with Black Beans Recipe

 

cooking time : 15 minutes

 

Proceed as in previous recipe, but instead of cooking the black bean mixture separately, put it on top of the

fish and steam. Garnish with spring onions and lean pork, shredded, and serve.
