Method
1. Wash and shell shrimps, leaving tail tips on. Remove dark vein, wash and drain. 2. Slit the middle, turn the tail up and pull through the slit. 3. Sift the sugar, flour, salt, and pepper together, and mix with the egg. 4. Dip the shrimps into this mixture, place in a frying basket and deep fry until golden. 5. Serve very hot with the garnish of red pepper and the sauce.
