Ingredients

1 bream (680 grams.)

8 tablespoons oil

Method
1. Clean fish but do not fillet. Salt
liberally inside and out.
2. Heat oil in pan but do not allow to smoke.
3. Spoon some of this hot fat over one side of the fish, holding the
fish over the pan.
4. Fry until lower side is crisp, basting the upper side all the time.
5. Remove from heat and leave the pan to stand until it cools.
6. Carefully turn the fish over and cook until the second side is
crisp.
Note:
This method of frying fish, allowing the oil to cool before turning it,
makes the fish crisp. Fish fried in this way can be served plain as it
is, or with sweet and sour sauce.
