Chinese Fried Haddock Recipe

cooking time: 5 minutes

 

Ingredients

  • 1 haddock (450 grams)

  • salt

  • 1 dessertspoon brandy

  • oil

  • 2 cloves garlic

  • 1 slice green ginger

  • 4-5 spring onions, chopped

  • 1 tablespoon vinegar

Method

 

1. Sprinkle fish with salt and brandy and leave for 8-12 hours.
2. Cut into collops and fry in very hot oil until golden.
3. Pound the garlic and the ginger into a paste, add spring onions, blend with vinegar, sprinkle over the fish

   and serve.


Variation
Chinese fried whiting
Proceed as in previous recipe, substituting 450 grams whiting (large-size) for haddock.
