Method
1. Wash and shell the shrimps, rinse and
drain.
2. Slash down the back of each shrimp with a sharp knife, remove the
dark vein, then make a few
slanting cuts on
each shrimp.
3. Mix egg whites, salt, and flour.
4. Put a thin layer of this mixture into the long cut of each shrimp.
5. Cut the bacon rashers into pieces about 1
1/2
inches across.
6. Put one of these bacon pieces on top of the egg white, salt, and
flour mixture and press
lightly with your palm.
7. Heat oil in a pan. Lay the shrimps bacon side down and cook until
bacon is crisp.
8. Turn carefully to cook the other side.
9. As soon as the shrimps turn red, skewer them on cocktail sticks and
serve in the sauce
