Method
1. Wash abalones, put in a saucepan, add
enough water to cover, bring to the boil, simmer for
2. hours, adding more water when necessary to keep the abalone just
covered.
2. Drain, put in a rinsed pan, cover with fresh water and cook for 8
hours, until the abalone is tender.
3. Drain, keep some of the liquid.
4. Slice the abalone, lightly fry in lard for 1 minute.
5. Dilute corn flour with 3 tablespoons of the liquid in which the
abalone was braised.
6. Add Ve-Tsin and oyster sauce, blend well and pour the mixture over
the abalone.
7. Simmer, stirring, for 1 1/2
minutes and serve.
