Braised Lobster with Cabbage Recipe

Method
1. Cut lobster meat into fairly large
dice and shred the cabbage.
2. Heat half the oil, sprinkle in
1/2 teaspoon salt and quickly toss
the cabbage in it, `scrambling' for
8-10 seconds.
3. Add half the water, simmer for 2 minutes, remove from pan and keep
warm.
4. Heat the rest of the oil, add salt and similarly quickly toss the
lobster meat.
5. Add soy sauce, sugar, rest of the water, and the brandy.
6. Set alight. Stir. Simmer gently for 3 minutes, add cabbage.
7. Cook for a minute or so to reheat it, add corn flour mixed with
water, blend and serve.
